Abstract:
The aim of this paper was to investigate the natural variation of biochemical compounds in two varieties of fruits belonging to Ribes nigrum L. species during maturation process, grown in Bucharest area. The fruits from Kzvana, and Roxia varieties were collected in the following phenological stages: early fistfruits (SIII), advanced firstfruit (SIV), harvesting maturity (SV), and consumption maturity (SVI). The fruits were smashed and subjected to extraction using 50 % etanolic solution. Total phenolic content (TPC) expressed as gallic acid equivalent (GAE), total flavonoid content (TFC) expressed as rutin equivalet (RE), and free radical scavenging activity (FRSA) expressed as ascorbic acid equivalent (AAE) of extracts, were determined. Also, the influence of total phenolic and flavonoid content on free radical scavenging activity was studied. The fruits of the varieties differed considerably in their phenolic content during the maturation process. Thus, the maximum value of TPC was achieved by the fruits of Kzvana variety in SV stage with 7.36 mM GAE/ml extract. With regard to the flavonoid content were highlighted the fruits of Roxia variety in SVI stage with 1.24 mM RE/mL extract. With regard to FRSA, were highlighted the fruits of Kzvana variety in the last stage of maturation process.
