Abstract:
This article touches upon the topic of preserving traditional cuisine in modern Ossetia. Rituals associated with the preparation and consumption of food and drinks are an important part of the culture of an ethnic group, helping to preserve its identity and traditions. The introduction to the article reveals some of the traditional ways of preparing, serving and eating food and drinks, which reflect such properties of the Ossetian lifestyle as respect for elders, the greatest hospitality and deep religiosity. However, theory without practice is dead, so the main part of the article is based on the materials of an ethnosociological survey conducted in April 2019 by the Center for Research of Border Regions of the South of Russia ISPI FCTIS RAS with the participation of 500 respondents in the city of Vladikavkaz and other cities and villages of the Republic of North Ossetia - Alania. The data obtained show that traditional methods of cooking and drinking are widespread both in rural areas and in cities, and the residents themselves love traditional Ossetian cuisine and regularly prefer it. We believe that the distribution of Ossetian food serves not only to preserve traditions, but also attracts tourists, which in turn contributes to the development of the economy of the republic and the entire North Caucasus.
